Saute sweet onion, tomato, avocado, low sodium honey ham, seasoning (molasses/bacon/maple) in real butter...

This was and is a staple for me when cutting down the carbs, very satisfying after a good workout. Probably ate this meal twice a week for the last 2 years and still look forward to it. It usually ended up being dinner instead of breakfast...

The only eat to make scrambled eggs is with lots of butter and a little 35% cream!

Looks good - I do something similar but use different greens - leek, parsley, dill, different peppers.
Spinach..hmmm...maybe I'll try that.

haha yea for sure too much for one. I think it was too much for 2 as well but the wife and I were both starving last night. I usually make it with 5 or 6 eggs for 2 people. I also change up the seasonings a lot experimenting with flavors. I think my favorite is adding a little left over diced up Ribeye with a shot of wor...worcest...worcestire....you know the W sauce :D and some steak seasoning.
