the packaging says 4 oz is approx 140 cals and 22g of protein but everywhere I see online says that broiled pork tenderloin should have that nutrition per 3 oz. So doe that mean it just lost like 25% of its weight in water and now has 140 cals and 22g protein per every 3 oz cooked?

just be consistent with it. pick one and always use it. so either always raw, always cooked.

All it loses is water content. So whatever it was when raw, it will still be when cooked. (With the exception of any fat that remains in the pan).
