Don't worry yourself with these details.
Raw weight will suffice.

I just use the information on the back of the package regardless. Just pick one set of nutritional information when yo weigh it cooked and stick with that.

Using the raw weight is more accurate than using the cooked weight. Various factors (cooking time, water content) affect the end weight of the chicken, which is why raw meat weighs more than cooked. So if you want more accuracy, use the raw weight for your macros. But what's more important is that you stay consistent, monitor your progress, and adjust as necessary.

So cut them all up and weigh it before cooking, then divide into equal parts when done :).

I cook chicken in bulk too. Weigh it all out raw and divide by however many days you're going to eat it. I eat two chicken breasts a day (the uncut big ones). The weight/size can vary but not in extremes. So after cooking, I just pair the biggest one up with the smallest one. Medium ones with other medium ones. In the end, the total amount/average that you're eating over the course of those few days are the same.

^^This. I usually weigh a bunch, cook it, weigh it again after cooking, and divy it up equally.
