is there an optimal time to take supps, eat, vitamin, workout etc.

I workout after work around 7pm
I eat dinner before the gym, then immediately after working out,
I take my daily vitamin, fishoil, and post work out shake(protein,creatine,icecream,olive oil, vit d milk)

is this ok.. or should I be taking anything earlier. I do it this way because its easy
for me to remember, I eat dinner, workout, then come make my shake and take my vits.

You have to do what is best for YOU. I usually take all my vitamins after breakfast along with some extra vit D after I workout. I really only use protein before and after I workout because of the convenience factor. I use leucine before and after, and creatine after. Same goes for meals. If you only have time for 2-3 meals a day, then eat 2-3 larger meals. You'll be fine, you won't get fat I promise:) Sometimes I end up eating upwards of 1400 calories meals. I've never seen an ill affect from it.
