hi im 27 5 11" 210pounds. im trying 2 bulk up as much as i can but dont really wanna get any heavier would i be better of taken diet protein rather than the ordinary stuff to stop me putting on extra weight? thanks advice appreciated.

Please go spend a few hours/days digesting the information in the stickies of the Nutrition section.

It will be your best bet on this site if you're serious about changing your body composition.

What the hell is a "diet" protein? I am assuming it is a protein powder that has no carbs added.

You're existing in a conundrum then. Bulking = weight gain.

Protein will not cause weight gain on it's own, only when combined with a hypercaloric diet.
