So I read boiling tuna for 2 minutes got rid of the fishy taste of it, so I tried it and it actually works! Almost tastes like chicken now.

So I'm just wondering, would boiling tuna remove or change any of the nutritional values it has?

I don't think it does, boiling only does that to vitamins in vegetables (as far as I know).

Boiling removes a small portion of water soluble vitamins and minerals.

It shouldn't be enough to discourage you, since it's still a healthier method of preparation than baking or frying.

It will probably slightly reduce the already low fat content (like boiling / rinsing ground beef does ( http://forum.bodybuilding.com/showthread.php?t=1465201 )), as well as reduce the sodium, if you drain and rinse it afterward.
