making protein pancakes using whipped egg whites, cinnamon, cream of tartar, and psyllium cooked in frying pan on stove. what cooking temp will give me the fluffiest pancakes? low, med, high?

does not matter, use medium as it will be easier to control

Yea probably doesn't matter too much, just watch out you don't burn em if it's too high.

Aware me about cream of tartar and psyllium?

cream of tartar functions like baking soda in eggs, it basicaly gives u a less runny pancake. The psyllium absorbs water so u can add a little water and get larger pancakes

Might have to give that a try although I typically just use baking powder like you said.
