I do MMA so my goal is to stay in shape. I want my diet to be as low in gi as possible
2 egg omelette with bell pepper, tomato, onion and crushed pepper with 2 whole wheat toasts.
60g of oatmeal ( honey, 1 tbsp PB, apple, banana, red grapes and walnuts) with 1/2 cup of milk
About 42 grams of protein.

what do you guys think ?

calorie dense, but mucho nutritious and stocked with a good amount of protein and healthy fat.

It all depends on your goals. You have to be a bit more informative of what you're trying to shoot for so we can properly critique what you have here. Off the rip I can say it's a good breakfast ...although I need some form of meat along with my eggs! And of course a nice glass of OJ to hit the spot.

I see about 80-90g of carbs, 25g of fat, and only about 20g of protein.

Only thing that looks right is the fat. protein too low carbs too high.

Looks good to me. You ever try a can of Rotel with your omelette? So good...

high carbing breakfast works for a lot of people. i find it a lot easier to get the protein down later in the day.

plus, i dont really feel the urge to throw down carbs after i work out (work out around 7pm on weeknights)

I might be afraid of carbs but 60g oatmeal sounds good to me, but as mentioned above I would up the eggs.
