I'm currently scheduling a 300cal snack just before bed with around:

52g protein
10g fat
0g carbs

I'm currently having chicken/turkey & PB with a hard boiled egg.

Just wondering what other foods would be good also for variety, I dont like eating same things every day.

I'm very sensitive to carb sugars so only have complex carbs throughout the day, except post workout.

I dont want to take in another protein/casein shake as I believe in whole foods are better.

Looking for a slow release protein.

I know the fan favourite is cottage cheese but there is an eliment of sugar in those which I'm keen to avoid.

Any suggestions/recipes welcome?

You're right, cottage cheese is good, but you're also right that it provides some carbohydrate. While that's not a bad thing, I understand where you're coming frmo. What about regular cheese rather than cottage cheese? It's typically much lower in carbohydrate. An ounce of low fat cheddar cheese, for example, would be about 50 calories, 2 grams of fat, and 7 grams of protein.
