I usually eat oats right after my workout. Is there a quicker, easier, better carb I should be using?

No, oats are fine. Any is fine but you don't need to fix what isn't broken.

I do this, but I also snag a piece of white bread for the high GI, which gets insulin produced quickly which counters cortisol activity. I make an oatmeal + protein powder shake with some cinnamon, it's pretty damn good.

You're getting protein post-workout too right? Not just carbs?

oatmeal is just fine. There is no need to spike your insulin for 99% of us. Of course, if you are going to eat some processed high GI food, then this is probably the best time of the day to do it, and I can see how appealing it can be for people to attempt to justify it with the perception of benefiting from an insulin spike.
