i know carbs help prevent the body from using too much protein for energy and taking from your muscles, but what's the minimum amount of carbs one should take in each day in order to prevent this from happening and to keep your muscles looking "full"? is it 1g carb per bodyweight?

There isn't a minimum for carbs as carbs aren't an essential nutrient. An easy way to figure out how much you should have (with a standard BB diet) is to look at the calories left over after meeting your fat and protein minimums, and using these for your carb intake.

And in answer to the title question, you don't need carbs with every meal. There's also nothing wrong with having carbs at every meal, it's up to you.
