I had always learned cooking vegetables depleted them of some of their nutruents. THis can happen when boiling which is why they tell you to steam and have them come in with as little contact w/ wate as possible. While that is true, it turns out we can absorb a much higher percentage of nutrients when the vegetables are cooked. So even if a little is lost in the cooking, in the end we are better off eating them cooked. A quick google search turned up more of the same.
