Do you think FF milk causes me to have insomnia at night because the P + C is a big insulin spike with no fat to blunt it??

Maybe, I like to eat my food just the way it was meant to be.

It makes sense because the fat does slow it down.

I doubt it. Easy way to find out is quit drinking it before bed and see if you still have trouble falling asleep.

Insulin spike makes you more tired.. it's probably minor indigestion or lactose intolerances that's keeping you up. Try drinking it 45min - 1hr before bed or more and see if that helps. Also, skim is for pussies, drink whole milk instead :D
