This works, but it's a bit fiddly, but it's good if you have guests or something.

Melt some coconut oil, add a couple of spoonfuls of cocoa powder and mix to a smooth paste. Add sweetener to taste.

Dip in some coffee beans. French or rich roast is best, you want them strong and crunchy. Take out, one at a time, and put on a silicon mat or greaseproof paper. Freeze.

20 minutes later, coat them again. Freeze.


By now they should have enough chocolate on them to look good and not be overpoweringly coffee-ish.

It really is better to do them one at a time. I tried doing a lot at once, and ended up with a horrible mess.
