IF you have never watched the food tv show Good Eats I highly recomend it.
He breaks down food to the molecular level and explores the science of cooking as well as the historical roots of many foods. Plus its funny!

My wife and I met Alton Brown at a cooking expo.....extremely nice guy ...he was getting yelled at by his people for continuing to meet and greet even though it was time to go on stage. He asked us what we did for a living and discussed that for awhile. He had a contest winner on stage to help cook and the guy seemed like he expected to just have ameal prepared for him so Alton made him help with alot of it....Very nice guy

Love that show too. That is a well educated guy. I never equated science with cooking before.
