Is ricotta cheese good, i had it today, 1/4 cup with a little of splenda and added a little drop of vanilla extract and a pinch of sliced almonds. Is this a good snack?

sounds good to me, esp if reduced fat since you're losing weight. I'd mix it with a wee bit of yellow cheese on occasion and use it for filling something... like a lo carb tortilla or between roasted eggplant slices with some tomato sauce....
How can I still write about food and I'm totally full? LOL~~~~~~~~~~~~

recipesource.com will give you an idea on how to use eggplant (non BB recipes, plenty of dirty foods there-- but most explain how to prepare eggplant). Hey if you've never eaten it, just pick something else like zucchini, roast it dry in the oven, then do the ricotta & tomato sauce and spices. Just an idea is all...
