YES! All dark leafy greens are good. They are low in carbs per serving, and packed with tons of vitamins and minerals. I say eat all you can. Just be careful how they are cooked. I like them lightly steamed or sauteed with garlic. mmm mmm good.

Green leafy vegetables are all good! Kale, collards, mustard greens... just as long as they aren't cooked traditional southern style with a hamhock and slathered with butter.

I use them in soups, and love them sauteed lightly with garlic in a tiny bit of olive oil.

Hey Crissy! I agree with the others...collards are cool. I prefer to see turnip greens myself when I am at a buffet for example, but either for me is a welcome sight. You do need to be wary of getting the fats that come from any pork they are cooked with. Do you ever add pepper sauce to your's?

Greens Southern Style...sort of

I like to cook my greens with smoked turkey necks or wings rather than the traditional southern way with ham hocks. I spice them up with garlic, onion, red pepper flakes and some other 'secret' spices I stole...I mean my mom taught me years ago. I've also found that I like cooking collards with cabbage...they make a good combination, and cooking with turkey lets me feel not so guilty about them.

All I know is that my rabbitt eats the crap out 'em and by far they're the cheapest dark green veg in the market. The taste is a little strong for some, but mixed with spinach, garlic, and some pepper...
