21lbs in 8 weeks? That's over 2.5lbs a week you are going to lose some muscle in the process if that is the case. Also why can't you do cardio fri-sun? Your job can't take up your entire day and even if it does you can make time at some point. That's just my opinion. As far as advice goes, I'll leave that up to a more experienced competitor.
