Damn, that's still wayyy more food than I usually eat in a day.
When I first started doing this I thought the actual weight lifting would be the hardest part, but now I've found out actually working out is a breeze; it's the nutrition part that's incredibly hard.
I might just start eating 2-3 cans of tuna a day. It's cheap and it has a ton of protein. Would that be a bad idea though because of the mercury?

No, you won't die from mercury poisoning.
Also, 3 cans of tuna a day aren't going to make u big. You need to work out how many calories you need to eat p/day to gain size, and divide that into 5, 6, 7, 8 or however many meals you goddamn want. By meals i mean nutritious WHOLE proteins, carbs and healthy fats, not peanut butter and jelly sandwhich(that's a snack). Also oatmeal in skim milk is fukin bollocks.
Oh, and space ur meals out 2-3 hrs apart. You need protein every 2-4 hrs.
