Local: The only thing near Long Island i have hiked Is the Palisades. They were pretty nice, you get a great look up at the cliffs and a nice views from the tops of the cliffs. Not really challenging. Its pretty flat the whole way, either your walking alond the bottom of the cliffs by the water, or up along the top, but there are sections going from the top to bottom were its challenging.
Not Local-South: Drive down to the Del Water Gap and there are ALOT of differnt trails to hike.
Not Local-North: Drive to the Catskills and there are tons of trails to hike. You can climb Caterskill falls and see the waterfall, wich is pretty sweet, hike the top of Hunter Mountian and countless others.
You could drive to the Adirondacks or even farther to Vermont like Ranger X said.
Search the web and you can find more info on these places.

Adirondack Park - North of Schenectady
You have one of the greatest State Parks in the world, much of which is designated 'forever wild', with no logging or development of any kind allowed, whatsoever.
A hikers dream.
I sell logging equipment all over the world and my customers tell me about the kind fo timber that is in that park and how they work on its outskirts and drool over some of the virgin forest that is in there.
Go check it out. Probably about a three hour drive from NYC, north on 87 to exit 23 and take Hwy 9 to Hwy 28 and then straight on to Blue Mountain, elevation about 3800 ft.
Park and get lost. Take lots of pictures.
