Is it really important to 'walk' during this exercise? My gym is crowded and I'll look like a clown walking around with dumbbells. Can I just stand and hold them for as long as I can?

yup - it's called a static hold.
but keep in mind you're likely to gain more functional strength from farmers walks.2007 INBF Long Island Experience:

Screw'em. Walk around with some big weight. Strut around with big weight. Strut around with big weight and talk to chicks. Get a phone number before you let go of the dumbbells. Thats good training!
