recipies or just help with chicken.
I am sure this has probably been hit on before but I have only been her for a couple of months. I need some good recipies for things I can make on the go or that can be microwaved. I work usually 12 hours a day and only have access to a microwave for heating food. Sometimes I don't have access to that and need cold meals. When I microwave my chicken ( cooked ahead of time) it is about like eating rubber. I use sandwiches usually tuna or PB on Ezekiel bread. anybody got any ideas on cold meals as well as some good change ups for the chicken?

I usually eat it cold. Same with Tuna, just drink water and swallow it in chunks.
I also pre-cook beef jerky on the weekends, and have that with carrots and celery sticks.

Cold chicken with a salad & oil/vinegar is yummy. I also like just using some nice mustard (ie 0 calories, lots of flavor) with maybe some red pepper and garlic, then add in some cold veggies like carrot sticks or celery. I never re-heat chicken in the microwave - always eat it cold (unless it's in soup or a stir fry).

Sounds like you might be nuking the chicken a little too long.... I put a little water in the dish and nuke on high for about 1 minute.... just enough to warm it up a little....

A couple of things you can do. When you pre-cook your chicken, only cook it to about 110 degrees, then chill quickly, then when you heat up a second time, make sure it gets about 165 internal temp. You never want to cook food all the way 2x, as it dries it out.
A good chicken salad recipe that I like is to take cooked chicken breast that's been chilled, dice it up, add vanilla non-fat yogurt, and diced up pineapple, orange segments, papaya or mango, with some chopped almonds.
Another tip for chicken, is to dice it up when it's raw, then saute' with olive oil. You get a sear on 6 sides of the chicken vs. only 2 when you saute the whole breast. It's easy to dice if you do it when it's partially frozen and use a serrated knife. Plus, if it's already diced, it cooks in about 3 minutes flat. Toss it with concasse of tomato (skinless, seedless) and cucumber, some capers, and just a bit of smart balance.

I cook a bunch of boneless breats on the bbq grill with some seasoning on top of them. I use garlic and onion powder. I cut them into smaller pieces before so the cook quicker.
I put them in ziplocks. To eat them, I put them on a paper plate and pous some veggies on top. I get the small cans which are 2 servings each. Microwave for 3 minutes with some hot sauce on top. Yum.
The same thing works for steak and pork as well.

Don't cook your chicken till it's done and then pack it up.. Leave it slightly pink in the center.. 45 sec in the micro and you are golden.. For me, it doesn't have to be steaming hot, just warm.. I can't do cold chicken other than the prev night's bbq.. Mariandes (sp) help.. GrillMates Zesty Herb is awesome..

Perdue "short cuts" chicken strips. This is already cooked grilled chicken that does VERY well in the microwave. Doesn't come out like rubber at all... It's a bit more expensive than cooking it yourself, but it's quick, just as healthy and heats up great... I hope this helps...

I'm going to assume that you keep a cooler with you for your food, right? That said, I've found a decent solution with chicken. You can go to Costco, or Sam's Club, someplace like that, and score 6pk budles of canned chicken! You can get big 12 oz. cans. It sounds nasty at first, but they're not bad at all. I will eat half a can at a time and it packs 39g protein with only 1.5g fat. Either make ahead of time or make at work, but take a spoonful of nonfat mayo, salt, pepper, cut up apples and some walnuts, mix it together and either eat it on top of pre-bagged salad greens or on some whole grain bread for a wicked sandwich. Or you can just throw it onto a salad by itself! These things are awesome in a pinch, and for convenience. In the a.m. you can even add it to scrambled eggs with some onions and peppers or whatever. You can also toss some chicken into a burrito. Quick and easy.
