Best size hiking back pack
What size would you recommend. I would be thinking as big as possible then I can still use it even if I dont fully fill it up.

5500 cu. in. is the beginning of the "Expedition" range. They go all the way up to 8000 cubic inches, which is absolutely huge, I could probably fit myself in it 
If you pack sparingly, you can easily fit a week, probably more, worth of gear/food in a 5000 cubic inch pack.

It depends on how long your trips are going to be, with a week or so, I'd say around 5,000 cuin should give your some breathing room, it really depends on the compressability of your gear, how much food you bring, fuel consumption, etc. There are tons of variables, however, a 4500-5000 cubic inch pack should be good.
If you are only planning on trips of 2-3 days, I'd suggest something smaller, maybe about 3000 cubic inches, again, it really depends on what you are looking to do with it

so what about in dimensions, eg. 50*30*20= 30000cm^3=
Is a litre= 10*10 *10cm?

Ahh, you are metric? Yes, a Litre is 1000 CCs.
I guess you could do the dimensions like that, but most websites offer a perfect measurement of how many CCs/CIs/Litres are in a certain pack.
5500 Cubic Inches = approx. 90 litres, so anything over that is extremely large.
I'd say anything around 80 Litres should do the trick.

I use a military issue ruck sack. works just fine for me.

5000 cc is plenty. Advice for you: get it off ebay. A friend from canada purchased hers from okbuybuy.com - EXCELLENT service and the bag was gorgeous, very well made and only cost her like 60 bucks. Shipping cost her almost 100 dollars because she only remembered she needed a pack like a week before she left for her trip
