Keto Coconut Curry

Ingredients

1 can coconut milk
1 red pepper
Curry powders (tumeric, corriander, etc.) or curry paste (be careful with these, watch for hidden carbs) to taste
1 lb. any kind of meat you want to use (boneless or bone in)
2 tbsp. oil (peanut oil works well)
1 basil leaf

1) Sautee the chopped red pepper in the oil in a deep pot
2) Add the meat and lightly brown on all sides
3) Add the curry powders/paste and basil and cook everything together for another minute or so
4) Add the coconut milk and let the mixture simmer over low heat for about 20 minutes or until meat is cooked through.
5) Enjoy!

Are you sure this is good? I've had some bad experiences with straight up coconut milk. Does it not stick out too much?

Stick out meaning what? The can I used had <1g carbs per serving with 5 servings in a can. I'd imagine its no worse than splenda.

? lol. Have you ever had curry? I guess you could substitute it with water and heavy cream if you'd like.

I love curry. It's just the coconut milk which can taste funny to me.

Did you ever notice that? Or do you love it?

I prefer coconut in Thai curries rather than Indian though

I made it and it IS pretty good. Although that shampoo-y taste is still a little present. Though I bet playing with spices and veggies I can make it perfect.

Onions would probably go a long way in this recipe.

Try organic! I found that too with some brands, but other's are fine, just keep looking around. Thai kitchen is the brand I like.
