Ingredients

1 can coconut milk
1 red pepper
Curry powders (tumeric, corriander, etc.) or curry paste (be careful with these, watch for hidden carbs) to taste
1 lb. any kind of meat you want to use (boneless or bone in)
2 tbsp. oil (peanut oil works well)
1 basil leaf
1) Sautee the chopped red pepper in the oil in a deep pot
2) Add the meat and lightly brown on all sides
3) Add the curry powders/paste and basil and cook everything together for another minute or so
4) Add the coconut milk and let the mixture simmer over low heat for about 20 minutes or until meat is cooked through.
5) Enjoy!
