Not every animal, the Bible says EVERY KIND. Therefore, he could bring two dogs/wolves, two creatures that relate to the cat, etc.

Personally I believe it would be more a case of taking 2 large cats, 2 house cat sized cats, tame dogs and wild dogs. Or what if he took a male of one species and a female of another. What if the animals that were sent to the ark were already impregnated? And keep in mind God has the power to create races, it's not illogical to think he has the power to control breeding as well.

2 and 3 I think you should study the bible under the context in which it was written. if you read a poem like a weather report you aren't going to get the weather or the meaning of the poem, it's the same thing as what you are doing. Honestly, I would encourage you to learn the history behind Genesis and surrounding cultures to understand Noah. I would also encourage you to learn the difference between an ancient biography (bios in greek) and a modern biography it would go a long way in helping you to understand what Matthew was trying to say.
