Sugar-free instant pudding??
I recently read an article on BB.com that gave a 12-week sample diet which included 2 cups of sugar-free instant pudding as a meal option.
Thoughts???

2 cups of pudding is not exactly a great meal, and on a diet would not be great as it isn't satiating. Better to make your own diet with protein + carb + fat in each meal, and whole foods to keep you full.

Oh for sure its not bad on its own as far as protein content is concerned... To curb a sweets craving or as dessert... but as a meal?? Lemme dig up a super easy recipe I have with sf pudding... Its amazing.

Ok. Here's the recipe. It's important to follow the steps in order.
Combine 1 500g container of 1% cottage cheese with 1/2 cup of water or skim milk. Blend until smooth.
Add 1 package of fat free/sugar free Jell-O Pudding or Dr. Oetker's Light Mousse and blend until well combined.
Try not to eat it all in one sitting.
Variations:
-use coffee instead of water (thx Nath ) with chocolate pudding/mousse for a mocha
-add 2 scoops of whey to boost protein
-sprinkle with cocoa powder (13cals per 5g) and splenda for a chocolate kick
-top with SF jam and crushed shredded wheat
-add fresh berries or banana for a great post w/o meal
You get the idea...anything goes really!

I found that making the fat free/sugar free Jello pudding with cottage cheese gave it a very bitter flavour. I make it with skim milk and 2 scoops of Allmax Isoflex PB Chocolate protein powder... it's really good!!

saw the thread & thought I'd comment
there are quite a few protein bar recipes that use sugar free/fat free pudding as a base
so instead of just 2 cups of pudding you could make 8-12 protein bars instead ..
plus then add peanut butter/whey & any other goodies you like .. just an idea
