I would just stick with an even mix of both of them, use really heavy weight when you are doing 2 legs at one time, then directly after the set get a significantly lighter weight and blast the calves one at a time with a high number of reps, well force a lot of blood into the muscle and should promote new growth...best of luck!

I like to do them one leg at a time holding a dumbbell with the opposite hand. You use less weight, which is kinder on your back, as one leg supports more bodyweight than the two-legged barbell or machine version. Also, by the time you have done one set for each calf you are ready to do the second set without much rest. Could be a time saver.

Blunt has the best answer
Anyway, much as I love unilateral emphasis, I think I'd just do it with both feet until I actually got some serious weight moving. Otherwise I'd spend too much time wasting learning to balance and press with only one leg with is sort of unusual.
I can learn that stuff once I've maxed out whatever apparatus I'm using.
Single leg is more conductive to doing it standing holding a dumbbell in the working side, and hanging on to a stair railing to balance yourself.

Doing it on one leg on a dumbell that is circular really works it well. I generally have one hand to stabilize and one hand to hold a 35 lbs dumbell in front of me. It works my calves really well. I see a lot of gymnasts doing it this way.Share and Find videos of exercises
