I have made this twice now and I really enjoy it. For a soup it is very low sodium seeing that campbells veggie beef soup has over 900 mg sodium per serving.
I use Herbox beef bouillon powder. 5 mg sodium per packet, 8 packets in a box.
I use 6 cups water, mix all 8 packets of the beef bouillon powder in with water.
Brown 2 lbs laura's 94% fat free ground beef
2 large cans vegg-all
pour some minced onions
That is it. I think the vegg-all has 9 grams of carbs per serving, and 290 mg sodium the only other sodium you get is from the beef bouillon packets and the beef itself.
Now if you went to completely frozen veggies you could probably get the sodium intake to be very very low like less than 50 mg per serving. I know the green beans I buy frozen have 0 sodium and I bet the other veggies would as well. Hmmmmmmmm maybe I will start making it that way. But it sure is good. I am used to a lot of salt from my past so it doesn't taste the same, taste like it needs salt lol but it does have a good flavor and I eat this for meal #4 each day. I get all my carbs in a day on the first 3 meals of the day.
Just something I threw together to try and have something different, would love to eat crackers with it but I don't eat them anymore as well.
