What are some things that bodybuilders do to help them lose excess water weight?
I am bloated beyond belief right now and am feeling sooo uncomfortable. I don't really want to take diuretics cause I know that they will just dehydrate me. Aside from watching my salt and carbs and drinking more water, how can I get rid of some of this water weight?

you already said what you need to do. cut down on carbs, drink more water, and keep your sodium and potassium intake balanced for what you need.
other than that bodybuilders do some severely extreme things to get all the water out from under their skin before a comp.
sweating out will only cause you to get into an electrolyte imbalance and hold more water.

Just read an article that says to use 250-500mg of B6 for one week and eat a ton of watermelon; that watermelon is "a powerful diuretic" and that it will "flush out subcutaneous water." -- Muscle & Fitness, Nov. 2005, page 112.
Before you do anything, though - you may wish to be sure you are in fact carrying too much water or you may find yourself on the floor looking pretty silly and wishing you weren't you...

It's practically impossible to tell the difference between water and fat at relatively high body fats. Below 10% it is pretty obvious, water will tend to wobble more than fat will over the abs. Above 10%, you can't really tell unless it is severe oedema (e.g. pitting) which you won't get from just eating too much.
The first rule of cheat club is you do not talk about cheat club. The second rule of cheat club is you DO NOT talk about cheat club. Third rule of cheat cub, someone yells stop!, goes limp, taps out, the cheat is over. Fourth rule, one cheat at a time, fellas. Fifth rule, cheats will go on as long as they have to. And the sixth and final rule, if this is your first night at cheat club, you have to cheat.

I want to make it clear that I don't condone practicing this, but I would assume a one day fast with plenty of water and green tea would take away most retained water. I'm sure eventually you'll nearly deplete sodium/potassium stores, and after a couple of days, start secreting ADH (vasopressin) to help conserve any minerals you have left. But for the short term, I'm sure a fast would work theoretically.

If you’re going to increase water intake, along with a proper, clean diet, make sure that you’re balancing sodium/potassium and don’t go to any extremes with either of these minerals. You won’t attain what you’re looking for by restricting or loading with a particular mineral.
