Is it me or is chest really hard for you guys to get defined too ? I workout.. Than because of work I don't do chest for a week and they become man boobs again. Any suggestions in terms of how I can get them more defined. Seems to be the hardest place on my body to get cut.

Well, first I'd get a better diet and do some cardio. I would also do a couple bench dips, some incline, some fly's, and of course some flat bench both with barbell and dumbell.

The chest becoming man boobs in a week is a mental thing. If you maintained a good diet and took a week off from lifting you're chest isn't going to noticably physically change, it's all mental man. Now, if you took a week off and totally went on a binge diet, eating like complete crap, then its possible.
But yea, diet/BF % is the key. Looking "big" is often an illusion of low body fat.
