just made some pumpkin muffins for my breakfasts all week....mmmhhh figured i'd share with yall cause man they are freakin awesome!!!
(i kinda went a little crazy with addin in all the diff types of carbs lol)
1 Cup of ground flaxseed mill
1/2 Cup of Wheat Bran (toast if for a few minutes; until brown; before you add it in the mix if you want....makes more of a nuttier flavor)
1 Cup of steel cut oats
1/2 Cup of whole wheat flour
1/4 Cup of Rolled oats
1/2 tsp of salt
1 tsp of baking powder
2 tsp of baking soda
2-6 tbsp of Cinnamon ( lol i really like cinnamon)
2-6 tbsp of Pumpkin Pie Spice (really like this too)
1 tsp (or more if you like) nutmeg
1 tsp (or more if you like) ground cloves
(you can add all spice too if you like it....sometimes i do, sometimes i don't)
2 16oz cans of pure pumpkin
Mix all that together
Then, in a separate bowl add 3/4 cup milk, 2 whole eggs, 2-3 tsp of vanilla extract. Mix all together with blender then add into the other mix.
Mix both bowls together, then add in 1 cup(i usually add 1.5 cups) of walnuts, 1 cup (i usually add 1.5-1.75 cups) of raisins (i add a lot of raisins b/c i don't use any straight sugar). and mix that in as well. [If its too runny then add in some more steel cut oats, or whole wheat flour to thicken it up]
Preheat oven to 350degrees. Then spray your muffin tins with Pam-Butter flavor (i'm usually pretty generous with this lol) and add in your muffin mix. Let bake for about 30-40 minutes or until they're done. They're awesome if you eat them right when they come out, or i like to split them in half, add butter, (maybe some honey), and toast them in the mornings for breakfast.
Sorry if i'm kinda rambling, but man i was pumped about makin these and they're soooooo good.

naaa i usually add close to 2 cups of raisins. And man the spices and all along with the butter i toast em with.....just right IMO. I've been eatin one or two of these everymorning with my eggs for about a year or so now. (at college mom would bake 'em for me and send them to me to heat in the mircrowave at the cafeteria)
