Kangaroo Recipes
Well I finally got to buy some kangaroo this weekend!  So, now I have 8 oz of ground kangaroo and have no idea what to do with it. I'd rather not make a plain ol' burger, because it's not everyday I get to eat something so exotic.
So, for anyone who's eaten kangaroo, do you have a healthy/yummy recipe for it? Thanks!

You're so lucky you got kangaroo, i can't find that anywhere. 3 things come to mind though: meatballs, meatloaf, chili.

they don't have something equivalent to a whole foods? or some fancy pants organic type healthy fooding type food place? these are the places i usually have to go to to obtain obscure meats.

yea I did a search, but all I found were workout logs, and I didn't feel much like scrolling through 25 pages of workouts to find a mention of kangaroo hehe

Oh yum.....Being an Aussie I eat this ALOT!!!
I use it in the following meals:
Meatloaf
Spaghetti Bolognaise
Chilli
Meatballs with tomato pasta sauce
Burger/sausage patties (we also call the rissoles - lol)
Kanga mince added to homemade rissoto (oh this is great with some grated cheese on top)
Kanga Chow Mein
I know Mattor is also a kanga fiend....he might has some other suggestions too.

Oooh, the risotto dish sounds great, I love risotto!
I've read that it's very low in fat so it dries out easily...would the meatballs/loaf be dry if I cooked it all the way through?

what type of cut is the meat? do you have mince or fillets?
You are correct in the meat being very lean so be careful not to overcook it, particularly if it is steak/fillets.
If using for a meatloaf, which im yet to try but have some ideas, id make sure there was plenty of moisture in the mix, perhaps some tinned tomato (depending on what flavour you go for) would help to add moisture.
Im a big fan of keeping the flavour quite simple and using it for a stir fry type dish. Giner/garlic/soy/fish sauce type of marinade works well. It is also very receptive to flavours so you can pretty much go for whatever flavour you like best and it will be good. It is quite gamey though so i wouldnt go too subtle on the marinade.
I've also made greta satay's with roo meat (2tbsp PB, 1/3 cup milk (low fat is fine), 1/2 tsp each of minced chili and garlic and 1/2 tsp tomato paste)
When i first started using roo, i just did some recipe searches and got a bunch of helpful tips on how to cook it as well which you could try

I just have ground which I suppose is the same as mince. That satay sounds great! I did do some searches but I'm not a great (or even good) cook lol and what I found was pretty involved, plus I like recipes from people that are health-oriented.

i can certainly attest to the quality of that satay! It is my favourite non-cereal meal atm lol
With ground meat you could just use any recipe for beef. The flavours are not too distant.
tbh, with ground roo meat, i normally make patties for burgers and use fillets/steaks for other types of dishes. A satay sauce w/ rice would be excellent and also a chili/tomato based pasta sauce is great

hmm Roo meat, i wish i could get ground Roo cheap(or any lean ground cheap)
Don't know if you would do this, but right now after opening this thread im thinking about a seasoned Roo Burger on and toasted english muffin topped with egg some fried onion,cheese & a bit of ketchup.

oh wow, i did'nt even know it had been done lol
but the egg i was thinkin of would be more along the lines of a scrambled thing like Mcdonalds has on there english muffins.

Ohh yea, here is a rice dish i used ground roo for with a sauce of 1tbsp soy, 1 tsp oyster, 1tsp minced garlic, 1/2 tsp minced ginger. Served with brown rice and veggies.
edit: ok, i used diced roo sausage but ground meat would be just as good
Great flavour combos in this one

Awesome, I have all those seasonings! And brown rice! No veggies, but I can just buy those fresh. Did you just brown the roo like you would with beef? I think I'm going to make that Monday, it looks great  I'm doing no-carb for the rest of the week so I think roo and eggs might be nice too until Monday.

Ahh, I Matt you didn't dissapoint!!!
With regards to the meatloaf, there is a great recipe of a meatloaf in the woman's recipe section....I just modified that and it came out delicious!!!! I think the oats really help with the binding and keeping it moist too.
Yeah, that roo and brown rice dish looks great! I do something similar...you just change the herbs depending on what you feel like, so as Matt says, ginger, garlic for an Asian flavour or even tomatoes, basil, parsley, etc for a European flavour, or you could do tomatoes, chilli powder, beans for a Mexican feel, or even curry powder, garlic and ginger for an Indian vibe!

Okay, I have made myself a little burger with just salt, pepper, a little garlic and some oil to hold it all together so I could just get the natural taste of the roo, and I am about to take a bite.....
*bite*
hmmm....the texture is a lot like beef, and it tastes like beef, but with more of a sweet/irony taste. Tastes like it would be great with a curry or sweeter spices. On Monday I'm going to make the dish with roo and rice. Thanks fur all the suggestions!

not sure but im pretty sure theyr protected.. anyway we dont drive around in ford pickup trucks with shotguns n rifles in the tray hunting for roo... we have supermarkets for that.
might be a diff story out in the country lol i wouldnt know

What are you talking about? Everyone in Australia has akubra hats and we go and shoot anything that hops, but its on the back of a holden ute, not a ford pickup

well you can order them from exoticmeats.com, and probably from random ethnic stores as well. The little hispanic place we visited for dinner served goat, but they were all out that night.
