i would embarrass most horses with the quantity of ****e i produce now. my question is... where is it coming from?? am i crapping out good nutrients by any chance? and if not, where is the crap that i SHOULD have been churning out in the first week? did it all get absorbed into my body?

Sounds like you've been doing keto the way the people who can't read do Atkins - lots of meat and fat and damn all veg. If you do that, you simply won't have enough fibre to shift things through your bowels, and you got the results you should have expected.
Now you know better, start eating your veg and drinking lots of water. You'll know you are getting the amounts right when you don't need to supplement with extra fibre to stay regular.65% fat, 30% protein, 5% carbs = keto.
