What would be more detrimental to gaining fat...

Eating junk food but then after 8PM not eating or only taking in protein or having lots of carbs right before bed?

So you are trying to figure out the best way to get fat? I would say keep eating that junk food!

Eating carbs isn't so bad IF you are still under or your total daily maintenance caloric requirement. Eating junk food you are more likely to go over BMR and also the crap you are eating will probably screw with your insulin levels much more during the day than a few carbs in one session at night.

    Regards,
    Alphonse

Junk food throughout the day but after 8 only having maybe a protein shake, then going to sleep around 12....or

Eating clean food throughout the day but still eating alot of carbs right before going to bed even if they are clean..

I think eating junk food would be more likely to make you gain more fat. As someone already mentioned, the time of day isn't all that important, but rather the daily caloric total is the most important factor. If you eat less than you burn in a day, you could probably eat a bowl of oatmeal right before bed and still lose fat. Junk food is much more likely to put you over your daily caloric total than clean food, and the calories are not from good sources either.
