I'm looking to gain the most amount of mass in the quickest amount of time. How many reps and sets should I do? Also, how much weight should I try and lift at once? I'm guessing not too much where I could hurt myself, but at the same time not too little where it'll be easy.
Any help would be very much appreciated.

if you are just starting to work out i would do a HST routine.
