Lack of joint fluid allows for the build up of air, but when you begin to exercise, fluid begins to fill those pockets, pushing the air out in a pressurized "pop".

    Solution: Warm up.

Do these funny noises sound like something is grinding? Does your knee feel like it is grinding???

    If the answer is yes.....

It sounds like you might have torn your meniscus.

Sounds like you definitely have a tear in your meniscus. I would at least get it checked out. These tears can normally be fixed with arthroscopic surgery. The surgery will require a minimal recovery period.

I know what you mean. I dislocated my knee a couple times baling hay and in the martial arts.

The last time I dislocated it, I popped it back in and tried to stand. I felt a sudden jolt of pain and fell down. I had always been able to stand on previous dislocations(after joint was put back into place). I knew something was wrong and the ambulance took me to the emergency room. It turns out I broke my leg just under the knee. They put in 3 screws and a steel plate into my leg. They also repaired my torn meniscus while they had me opened up.

    CHECK YOUR FORM!!!

Seriously, I had all manner of problems with my knee popping and making weird noises. My yoga teacher (I know, but she's bloody good) pointed out that my knees have a tendency to turn outwards when I'm supposed to point them straight. As a consequence, I straightened my feet to the front when squatting (whereas before, my toes always pointed outwards, something I never realised until she mentioned it), and since I've changed it, my knees haven't popped once.

It's worth a mention, at any rate. Check your form in a mirror, it could be that simple.
    Viking to the core.

    Fark yew.

What kind of doctor do you go to if you think you have a torn meniscus? Based on the knees popping and feeling like something is grinding I'm afraid I might have this in both knees from playing basketball. I can make my knees "pop" if I do hamstring curls while sitting in a chair with no weight. I've twisted one knee pretty bad one time and it was black and blue.

Can I just go to my main doctor... he kind of sucks. What kind of specialist could I go to?

EDIT: I also took a break from playing for over a month and one of my knees still hurts from time to time.
