You won't be gaining weight specifically from the chilli, it will be because your overall calorie intake is more than what you burn. You need to look at your whole diet and make some changes (lower cals, change the kinds of food you eat to more natural unprocessed sources).
Cottage cheese/milk/yogurt plus some healthy fats like nuts, peanut butter etc is good at night.
By the way, your user name cracks me up. Thanks for giving me a laugh on a dreary monday morningIts great to be home :)

There is no problem with eating at midnight - if you are hungry and it fits into your daily calorie requirements then it is fine.
Something that is not too heavy would probably be best (if you are wanting to sleep soon then you don't want anything that will upset your stomach) and, as it was suggested, casein (slow digesting protein) and some healthy fats would be a good option. But you could also have a small peice of fruit and a casein shake or a glass of skim milk with some walnuts... Stuff like that.
Although - if you are fine with eating that late (and fits your daily requirements) there is also nothing wrong with cooking yourself up a bowl of oatmeal with a scoop of protein powder in it for a midnight 'comfort food' meal!

Complex carbs (pasta, breads, rice, etc.) actually help aid sleep, which is why some people have an afternoon slump if they eat them for lunch. It's a myth that you shouldn't eat carbs in the evening. However, if you eat too soon before bed or too much, you may have problems digesting it. It doesn't matter what time you eat - as long as you're eating the right amount of calories overall and getting all your nutrients, you will lose weight. Some people just have a different body clock to others.
