put rice in pot, add 2x amount water. Bring to boil, cover, reduce heat to simmer. Wait around 20 mins till rice absorbs water.

You NEED a rice cooker. You simply cannot get brown rice to tastes rice-cooker-good without use of a rice cooker.

2 cups water for every 1 cup dry rice. You CAN overcook starches, but brown rice actually tastes good a little overcooked.
Add cumin, and some breed of spicy seasoning. Once it's finished, add lemon juice, pepper, sea salt, and some honey.

There are culinary reasons it won't taste as good:

A rice cooker is pot is usually VERY deep--this augments flavor

A rice cooker usually has a very THICK lid and a thick bottom (and better yet-a glass lid)-this also enhances the flavor

A rice cooker also prevents the rice from burning or cooking too fast--this prevents it from becoming overly dry

If you can find a pot with all of these qualities, you're in business-but the pot won't have the last property (a rice cooker shuts off automatically when the rice is done)

For WHITE rice, it really doesn't matter. For BROWN rice, a rice cooker helps a lot.

You can get a good one for $20, so I see no reason not to own one.

What's this about not being able to overcook starchy carbs? Is there any theory that states that it's different than overcooking, say, a turkey patty?

I think what they meant is that the carbs in rice won't further breakdown and become non nutritious or change as say how the carbs in an onion turn to sugar with prolonged cooking/temperatures, but just make for a wonderful clump of rice goo.

uhhh... pretty easy to cook rice... but with brown rice, it takes about 40-50 minutes to cook, not 20. If you know how to cook it shouldn't be a challenge, a rice cooker is unnecessary... I've had a 130 dollar rice cooker, and... I can cook it just as good in a pot.
