Chocolate Souffle
I could eat this for every meal, it's that good.
5 egg whites
splenda to tast
unsweetened cocoa- 1-2 teaspoons to taste
Whip the eggs white to a meringue, add splenda and cocoa anf fold until blended. Pour into a meringue dish and microwave approx. 3 minutes.
For a topping I add 1 Tbl. spoon unsweetened coconut (3 Tbls has 120 cal. 11 grams fat and 5 grams carb, two of which are fiber)
I also make whipped cream cheese topping with splenda and cocoa to taste. Chocolate cream cheese! I add about 1 Tbl. as well to the top of the souffle
I also take a serving of the chocolate cream cheese and top it with the coconut. Yummy.

I haven't really set the microwave at a specific power...I think it may be set on high. Usually I just throw it in and when the eggs get 'springy' then you know it's done. I had it for breakfast today. Delicious.

I do a variation of this, where I make a smooth paste with cocoa powder, leftover coffee and sweetener. This means you can taste the amount of sweetness before you mix it in with the egg whites.

OP... what power is your mirco? Mine, for ex, is 1200 watt... if yours is say, 800 I would need to cut mine back to 75% or adjust the time...

Of the unsweetened variety, about 4/5 grams per 20g of cocoa, and technically you're only using around about 10g, so 2 carbs.

No, this is more like a base chocolate sauce. You need to add egg whites and maybe some yolks or cream to make chocolate mousse. Or you can add extra coffee or other liquid to make a pouring sauce. Sometimes I just put a couple of spoonsfuls on top of cream cheese and eat it like that.
The children sometimes spread it on bread like Nutella.
