milk, water, or does it matter?
Should I put water Postworkout and at night put milk?

Weight gainer, yeah man, definitely milk, you've got the cals, protein, fat, it will put the weight on you. If you want to take it a step further, do heavy whipping cream and blend with water. More water will give it more of a liquid consistency, while less will give you a pudding.

After workout take one scoop with water so that the protein is absorbed by your body right away. (it is absorbed about 10 mins after drinking)
Then after the one with water drink another one with milk (it is absorbed about 1-2 hours after drinking)
That way your body will be able to absorb protein quickly and then will still continue to absorb as the muscle recovers and grows.
