So, after 2 years of not doing anything active at all, and a whole lifetime of being fat (up to a high of 280 lbs, 5ft11), I finally started working out and dieting well about a month ago.
I went down from 278 -> 255 in that month.
In the last week, I've went up to 258. Is it possible that I am gaining muscle faster then I am losing fat? Unfortunately, I don't have callipers or anything to take a body fat %. Eyeballing the mirror, it definitely seems that I have grown, and I'm starting to see more of the lumps of my muscles.
I haven't shlacked off my diet at all, and i've been eating 6 times a day, averaging around 2000 calories or so a day.
Any suggestions? Or should I just keep doing what i'm doing and get over my newbie paranoia?

Your last two words sum it up. "Newbie paranoia".
Don't worry, I experience the same thing regularly. Example: Last Saturday I was down to 199 (down from 212 only 6 weeks prior). Saturday is my "cheat" day so I don't follow my usual diet. By Monday morning I was back up to 206.
Chalk it up to mostly water weight. I dropped all of that after just a couple of days of cardio.
Sounds like what you're doing is working. Don't worry about minor fluctuations like that. It's natural.
