Sodium Manipulation: Once again, where's the science?
I suppose I will find the answer looking at my a&p book from undergrad... What does cutting sodium but leaving water high accomplish?
What is the "exact" benefit of sodium depleting and repleting?

Do you mean cutting sodium out completely? Or just lowering it? The body is perfect at conserving sodium, even when cut to 0mg/day.
Take a look at the study in this article:
http://www.bodybuilding.com/fun/drjoe10.htm
Blood sodium levels conserved perfectly after cutting sodium completely out.
But raising slightly and lowering slightly is more based on the principle that water follows solutes. It's those slight changes that make a big difference (that you can only see when you are lean enough), not the drastic ones that the body simply can't handle all at the same time. I recommend reading all of Dr. Joe's articles as they are quite informative.

Yes I'm currently reading lots of his stuff... I never would cut sodium, but what is the logic to manipulating it? What appearance does manipulation tranlsate too? Tighter skin, drier look?

Water follows solutes. Nothing drastic...rather raising sodium slightly higher than normal and gradually decreasing it to slightly lower than normal lets you somewhat manipulate the direction of flow wrt your fluid balance. By the time show day comes and you are merely quinching thirst with your carb meals, you'll notice that you were probably pissing all Friday night, and the water you are drinking with your carb meals are getting sucked right into the muscles with the carbs. Again, nothing drastic, just slight changes for a slight maniplation of direction...that's all. You can't trick your body, but you can give it a nudge in the right direction!
