    Deer sausage, good or bad?

    I haven't been able to find the caloric breakdown of it. Is it high in fat?

    Game meat is usually pretty lean. Also it's high in omega-3 fats, so you can be sure that whatever fat is in there is healthy.

    I'm pretty sure deer meat is pretty lean but when you say sausage, a red flag goes up. I'm not sure man.

    As one said earlier, game meat is generally not too bad. But when your say sausage, that means that it has been processed. It really is hard to say unless you find a comparable product with the nutritional facts. Try taking a look at www.nutritiondata.com for some details if you haven't checked there yet. Good luck!

    Well sausage is just the ground meat packed into some kind of casing. So it should be pretty much the same.

    Deer sausage fat content is dependant. Many places blend it with pork, and it can have a ton of fat in it then. If its pure deer, then any venison number should be representative. Also, usually sausage is made with more fatty cuts of meat. However, deer fat just about HAS to be cut out. It tastes too gamy for most folks. Knowing this, i would say that 100% deer sausage will be very lean and not bad at all. I would be extra careful to make sure and find out how much pork may be blended with it. If it has pork, its not the best meat used, and contains quite a bit of pork fat.

    I used to hunt alot, and have had deer sausage made. Learned a little more than i wanted to know then hehe.

    Depends on the pork cut. If its a fatty pork cut, then it will be bad. If its a lean cut (like from center cut chops) then it may be good. Probablly though, from what ive seen, its a junk cut, lots of fat.

    Cook a peice and see how much fat comes out.

    Venison is extremely lean, but therein lies the problem. If the deer is taken to a processing place (most are, some people do it themselves), the mix in either beef or pork fat so that it will cook properly. Venison steaks are very lean with no added beef fat, just whatever fat the deer had on it to begin with.
