I need another healthy fat source in my diet and I'd like to start eating an avocado every day. Last time I tried this I just ate the avocado by itself, with nothing on it. It was pretty bad, not something I can do day after day.
So what's something simple I can do with an avocado. I'm on a 5000 calorie a day diet right now so there really aren't any restrictions other than I'd prefer not to have a lot of sodium or sugar.

I like mashing it with a fork, so it's kind of like a thick spread. Put a bit of salt and pepper with a little bit of olive oil if you like. I sometimes put nothing on it, but salt, pepper and a little bit of olive oil obviously gives it a bit of flavour. I toast a couple of slices of bread, spread the avacado on it, you can slice a few tomatos if you like and put on some cold meat like turkey, or chicken slices.

Add some salsa and make guacamole.
Spread on a whole wheat tortilla, pile on beans and chicken.
Option 2: Grill up a buffalo burger (or ground sirloin, turkey, boca... whatever suits you) and top it off with a few slices avocado, add tomato, lettuce, low sugar ketchup, onions, rosemary (whatever tickles your tastebuds right)
Opt. 3: Have some beans and rice. Top with yogurt, salsa, cilantro, tomato, and avocado.
This idea I got from my favorite cheap "green" restaurant. It's only in my town, but maybe they could ship you some of their fantastic "Yumm!" sauce... it's healthy fat and vegan.
