    Peanut Butter Cookies

    not on keto anymore but i got this recipe and its pretty good

    1 cup of natural peanut butter
    .5 cup of granular splenda (the fluffy stuff that measures cup for cup like sugar)
    1 egg


    preheat to 325, mix together, makes 24 balls (i only got 23). put on ungreased pan. bake for 10-15 mins or until golden. dont overbake


    nutrition for the whole thing
    139/29/73 fat/carbs/protein total calories ~1650

    per cookie (if you only get 23 like me)
    6/1/3 fat/carb/protein ~70 calories.

    75% fat 7% carb 18% protein

    I made this and added a tsp of vanilla extract and 1 tbs of baking powder and they were pretty much like cookies---a little crumbly, but yummy! I was a happy girl---thank you!!!!!!!!!!!!!! I've been having the worst cravings for peanut butter cookies...I was even having nightmares that I was eating them last night.

    im not sure if im gonna be making these again because they went too fast, and im not on keto anymore. i really wish i had these when i was on keto though, then i coulda had some cookies along with my food rather than oil to get my fat in.

    Holy crap I just made a double batch of these, they totally have the potential for disaster. They're bite size and 70 cals each!! I can eat a lot of bite size foods if i'm not careful. Let's hope they make it 72 hours.

    They're very good, a little too good for those weak on willpower.

    I just made a batch of these and found them tasty, but filling! I only got 15 out of my batch. I didn't have vanilla on hand (despite a trip to the grocery store) but I did use baking powder, and I also added about a teaspoon of cinnamon. Turned out very well.

    Note to those of us who don't catch the obvious, like me:

    For a cookie shape, flatten them. Some cookies flatten from balls into discs when they cook, but not these.

    I made these the other night and they turned out pretty good... I changed the recipe a bit. I added 1/4 cup of ground almond (almond flour) which adds 13g of healthy fats (1 g of sat), and a few carbs. I also topped the cookies with small pieces of pecan on the top before baking.

    I wanted to mention that I don't think the carbs in splenda were accounted for in the original recipe posting. There are 96kcal in a cup of splenda, or 24g of carbs. With the changes I made, each cookie had 2.5g of carbs. Without the almond flour it would work out to 2g per cookie.

    carbs in splenda were counted.... 24g per cup = 12g per half cup. only calls for half a cup in the recipe. total carbs in recipe = 29

    rest of the carbs coming from the peanut butter

    1/4 cup Egg Whites
    1 level tsp Refined Coconut oil shortening ( to make up for lack of yolk )

    few dashes cinnamon
    1/2 capful Vanilla Extract

    < 1/4 cup boxed splenda ( under the line a bit )

    2 1/2 Heapin tspn FiberONE cereal crushed

    Stirred 2 minutes with fork - smashing / stirring / folding ..

    placed whoppin tspn sized balls ( about 1.5 " ) onto non greased pan - formed into squares and pressed into 1/4" or so thickness ..

    325 degrees - 10-15 minutes don't know exactly forgot to check clock just watched um ..

    besides it being funny all the oil bubbling underneath them while baking ....

    NOT BAD AT ALL THOUGH VERY DRY

    macros ? dunno 5 cookies total about 12g carbs - 7 fiber so 5g carbs total so 1g per cookie not including PB Carbs

    I guess I learned my lesson for experimenting with the recipie. I only had 3/4 cup PB left so I added a little bit of chocolate whey for flavor and protein, took out a tiny bit of sugar, added some cinnamon, and a touch of milk. The batter tasted fantastic but the cookies lost the flavor in the baking process. I'm gonna try one cold later though.

    I made these and they tasted AMAZING. I added in the tsp of baking powder and tsp of vanilla as recommended. I also warmed up the the peanut butter a bit so it would mix better.

    It is A LOT BETTER to make about ~14 cookies instead of the recommended 24. They hold there shape better. Also don't thin out the cookies too much because they tend to crumple. This was my first BB baking related sucess! (failed at cupcakes and protien bars)

    just made, only added 1 ts. vanilla. made 14, came out good, baked 20 min.. they were soft but put them in the fridge and they stayed together better.. i think i might use 2 eggs and see if that helps them be a little more moist..

    Carbs are a little high..the peanut butter was jif lower salt and sodium but not the complete natural but im getting some today. The 1/2 cup splenda has less than 1g carb per table spoon 1/2 cup= 8 table spoons. I kept them in the fridge and they were solid, little dry but keep a glass of water handy and their FIRE. Great snack if your busy. HOPEFULLY the 100% npb will cut the carbs down alot. If any one has any handy could you post how many carbs are in it.. I will try a full scoop of whey on the next batch. Any suggestions to make them more moist. maybe a table spoon of oil or butter?
