I don't know how they are easier to absorb... but they def. are runny.. just pour some of the oil out or stir it real well before you use it. thats what I do and it seems to mix eventually, although it will set and absorb better after you go to use it again for the second time once you refridgerate it.

I prefer the taste of roasted, however I am always weary of them as I read all over the place that roasting an destroy a lot of the healthy fats. I believe that there is a fine line between 'very lightly roasting' which doesn't affect the fats, and going over the heat limit to the point that degrades the oils.
