I already do deadlifts and shrugs (and occasionally bent-over rows), but I don't feel like I'm giving them enough work. I also feel like I have a hard time targeting my back specifically without involving many other muscles. What are some of the best exercises to do?

Best exercise for developing the lats in the back is easily chin ups. Do more and more. Then do some more. Then when you can't do anymore, do more. Eventually you will be able to do weighted chins. These really widen your lats and will give you the body builder V look. Its awesome. Pump the Sh!t up baby!
"So what’s inside you? This is it. This is the time. There is only now. Tomorrow is a dream and a day away. Can you go after what you want? Yes, only if you are motivated. The real question is, are you? Or do you believe that tomorrow will come and bring the motivation with it? Yeah well while you are waiting for tomorrow, I will be doing heavy squats and deads today to turn pro while you are watching me do so on TV."
