    Just a guess here, but I would think that cooked egg whites would be good just like other cooked foods would be good for, about a day or so before starting to get funky. As far as the egg whites, I would guess maybe the same thing as well, a day or so before you cook them, and another day or so after they're cooked. Anyone else?

    I crack my eggs into a bowl at night and then microwave them in the morning (to save the cracking and separating time in the morning...i'm always rushed). These seems to work well for me...at least I haven't gotten sick yet or anything and i've been doing it for about 7 months...

    you're better off cooking them then refrigerating as opposed to refrigerating raw. basic science.

    using some salt will also inhibit the enzymes from breaking down your food.
