O/T tatdawg cheat meal
i thought you would get a kick out of my country boy supper tonight. i had a big plate of fried catfish with a bottle of cayenne pepper sauce, fried green maters, fried okra, slaw and a big ol Mt. Dew all while watching Hee Haw reruns on tv. if i fell over dead right now i would die a happy man. oh yea a big bowl of nanner puddin for dessert. i don't even want to know how many calories or how much fat i just put in my body but it shore was good.

Good evening all....
Hey tatdawg.
Ohhhhh I love catfish......any left overs?
Did you catch those dudes yourself?
I love fish but I dont 'catch' fish.....I 'feed' fish....bait the hook....and feed 'em again.
I just finished pounding down pork short ribs (crock pot all day), lettuce, cottage cheese and rice so I'm happy camping myself.
Well lady and gentlemen I hope all had a safe 4th weekend.

Wow!!!!
Tat, you da man! Now, that's my kind of meal!
It is REALLY hard to get food like that here on the left coast. Durn sprouts and wheatgrass and tofu!
I'll just eat my baked tilapia, pico de gallo salsa, raw red tomatoes, spinach salad and huge glass of Lacroix fizzy water, finish watching the rerun of Nova and I'll shaddup.

I love catfish. I don't eat enough of it. Maybe I'll get some today and make it for this week. I've had gator in spicy tomato sauce, in New Orleans. It was damn good.

You eat them things?? I've been tossing back in those bottom scum suckers all my life and here we have folks who actualy eat them. My my. Once I was in Ft. Payne Alabama and had pone....sorta a fried corn bread thing with what they called "srip" poured on it. (We call it syrup here in down town LaLa Land). Once I was near the Mason Dixon line and had scrapple. Everything but the kitchen sink all tossed together with scrambled eggs...chit, might have even had catyuck fish in it??
Tat...that meal gave me the whips and jingles. Lordie. Gotta go get some menudo on the way to work this morning and settle my stomach.

Baldie! SHAME! Channel cats are predators and prefer to eat other fish once over 12". Far from bottom scum suckers.
Several species of Bullhead catfish are more of the bottom feeders.
Then there is the Flathead catfish...The Muskie of catfish, a true killer.
Mino!

I have a baking method for catfish. Build a large open fire and let the coals get bright red. Meanwhile you fillet the catfish and place them on a wet oak plank wrapped with wet banana leaves. Place it all on the coals for two hours or untill the leaves start to dry. Remove from coals, unwrap, and eat the oak plank.

Oh my god. I know what you mean. Just getting off vacation and hit the gym today. I gained 18lbs in 2 weeks. My weakness in the last two weeks were beer, grilling out every night, and late night snack........ Little debbies. (by the box).
Ugggh I will be on the right track as of today.
I have to tell the wife to hide the debbies, she buys them for my son, So I said from now on they will be in his room outta my view!

Hrmmph..it's a PA food and scrapple rules.
Take pork neck and boil it for a long time. Then add corn meal. Shape into a loaf and chill. Slice and fry.
Serve it with eggs.
Heathens.
Next you'll say Souse is gross..

Mmmm, scrapple. I found that in a meat freezer next to all the necks and shanks in a store here and tried it with eggs. Probably not nearly as good as homemade but I liked it.

hushpuppies - fried balls of corn meal
Little debbies - a line of discount snack cakes. Imagine (if you can) low rent Hostess cakes with a cute little girl on the label.
Biscuits - baked lumps of a flour based dough. I don't know how else to describe them

i'll try to traslate into something resembling the kings english for you.
nanner pudding = bananna pudding
little debbies = around 12 sweet cakes in a box bought at the store
red eye gravy = after frying bacon, sausage or ham in a iron skillet you take the grease left in the pan and add a little black coffee to it to make good sopping gravy
biscuits = a little flour, some crisco-lard and a little buttermilk mixed and baked in cathead size portions.
hushpuppies = made with cornmeal, onions, buttermilk and eggs in small crispy fried nuggets.
souse = pickled pigs feet

Thanks tat and Kevin. I'll stick with the cakes please Hushpuppies sound a bit yummy tho, I'd like to try those some day.
Are the biscuits soft or kinda hard and crunchy? When I was a kid and my Mum made a stew or a casserole, we always finished off with a slice of bread and gravy Can't imagine gravy made with black coffee and bacon fat tho ....
As for souse ...... an acquired taste?! Again, when I was a kid, plenty of people used to eat pigs trotters. And tripe. But IMHO, tripe should be condemned, taken to a remote location and burned til there's only a patch of scorched earth left. (In case you don't have it there, tripe is cleaned-up, bleached and boiled cow's stomach. BLECH!)

I will say this. You Americans And Brits eat some good stuff but the names are hilarious. Here in Canada it is just plain old steak and potatoes, pork, different fish but I don't see much catfish. Although my folks are from Europe and they eat Squid and octopus( I refuse rather suck on a Goodyear Thanks) Lots of fish where I am from, being a pork chop and all, but man you guys and gals are making me laugh boy.
