Here is a muffin that tastes good and has quite a bit of fiber too. They are so low-fat u can afford 2 put some natty PB on them.
Ingredients:
2 1/4 cup oat bran cereal (uncooked)
1/4 cup raisins
2 tbsp Splenda-brown sugar blend*
1 1/4 cup 1% milk
1/2 cup egg whites or egg beaters
2 tbsp applesauce**
1 tsp salt
Directions:
1. Preheat oven to 425 degrees F
2. Combine all ingredients in a large bowl, mix well.
3. Spray a muffin tin w/ Pam (butter flavor).
4. Divide up batter equally between the muffin tin cups.
5. Bake for 20 minutes, or until knife inserted into the center comes out clean.
6. Allow to cool 30 minutes before serving.
Nutrition:
Makes 12 muffins. Each muffin has:
81 calories
2g fat (0g saturated, 1g polyunsaturated, 1g monounsaturated)
18g carbohydrate
5g protein
3g fiber
Macro Profile: 20% fat, 62% carbs, 18% protein
Notes:
* If u don't have the Splenda brown sugar blend u can use 4 tbsp regular brown sugar, which adds a few more calories.
** I used the low-fat cooking trick of substituting applesauce for the oil. If you don't mind going up to 118 cal & 6g fat per muffin, you can use oil instead of applesauce & also toss in 1/4 cup chopped nuts.

nice recipie ill have to try it, how are those muffins ? Are they dense or puffy, light and volumous?
Heres my lowfat Oat Muffin Recipie btw, recipie makes 4 muffins at 115 calories a muffin. Measurements are in ounces btw for percision in macros for me, so it helps to use a scale if you make these
Bread Flour or All Purpose(i use unbleached bread flour) 2.1oz
Oats- .7oz
Splenda Brown Sugar Blend- .7oz
Bakeing Powder- 1 tsp
Cinnamon- 1 tsp
Salt- 1/2 tsp
Egg White- 2oz
Hood Calorie Countdown or Lowfat Milk - 2oz
AppleSauce- 1.5oz
In a bowl, combine the first six ingredients. In another bowl, combine the egg, milk and applesauce. Stir into dry ingredients just until moistened. Fill four muffin cups two-thirds full. Bake at 400 degrees for 12-15 minutes Cool for 5 minutes before removing from muffin cups.
oh each muffin if useing hood calorie count down milk has
115 calories
.5 g fat
23 carbs
2 fiber

They don't have any flour in them, so although they do rise some, they aren't puffy. They r fairly dense, about like a regular bran muffin.
Another comment. If u don't have a muffin tin, u can bake that batch of muffin batter in a 9"x9" square cake pan & then cut it up in2 squares. Takes a bit longer 2 bake that way.Best Regards,

guys an awesome flavouring tool for muffins, is to half pack the mixture in the muffin tray then add in a tsp or so of sugar free jam (or jelly for the americans) then put in a bit more mufin mixture. This gives you a fruity surprise in the middle of your muffin and moistens it up a little
